Plant-based Dishes
Misir Wot:

Meat-based Dishes
Doro Wot:
Savour the bold and spicy flavours of Doro Wot, an Ethiopian chicken stew. Simmer chicken in our Spicy Stew Base until tender, allowing the aromatic spices to infuse the dish. Serve with traditional injera for an authentic Ethiopian feast.

Qey Wot:
Indulge in the rich and hearty Qey Wot, an Ethiopian beef stew. Slow-cook beef in our Spicy Stew Base until it reaches melt-in-your-mouth tenderness. Accompany it with injera or rice for a satisfying and aromatic meal.

Ingredients

  • 2 tbs vegetable oil

  • 2 onions, finely chopped

  • 4 cloves of garlic, minced

  • 1 tbs ginger, grated

  • 2 tbs Amaarech berbere blend

  • 1 tsp Amaarech tikur qimmem blend

  • 1 tsp Amaarech mekelesha blend

  • 1 cup vegetable broth (divided)

  • 1 cup tomato puree

  • Salt, to taste

Preparation

  1. In a large saucepan over medium heat, add chopped onions, salt and sauté until translucent, about 5-7 minutes.

  2. Add vegetable oil and cook until onion is caramelised. Add minced garlic and grated ginger to the pot, cooking for another minute until fragrant.

  3. Reduce heat to low and add berbere and tikur qimmem spice blends to the pot. Stir well to coat the onions, garlic, and ginger. Cook for 2 minutes, stirring constantly.

  4. Gradually add splashes of vegetable broth to the pot, stirring well to create a thick paste. Cook for an additional 5 minutes to develop flavours.

  5. Add tomato puree to the pot and stir to combine with the spice mixture. Cook for 2 minutes.

  6. Gradually add splashes of vegetable broth, stirring well. Reduce heat to medium-low, adjust spice levels if desired, and cook for about 20 minutes, stirring occasionally nd adding splashes of of vegetable broth.

  7. Remove from heat and let the stew base cool before using in your desired recipes. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.


Note

  • When making your desired dish, add the mekelesha spice blend at the end before finishing your cooking to round out the flavours.
