Fossolia is a stir-fry of green beans and carrots. It’s a delicious and easy to make side dish. The korerima is the star ingredient – together with the sweetness of the carrots and caramelised onions, it gives the dish a nice balance of flavours.

A classic dish for many African countries. It is rich, flavourful and extremely satisfying. I used smoked tofu & butternut squash to keep it fully plant based and served it with homemade flatbread and corn on the cob.

Minchet Abish is a highly spiced Ethiopian Minced Stew traditionally made with ground beef and served with ayib. It is typically eaten on special occasions. I have made it fully plant-based by substituting the beef with a plant-based mince.
